Air-Whipped
Do you like fluffy desserts? Those are air-whipped treats! They are made by vigorously whipping cream, egg white, and even aquafaba until tiny air bubbles are incorporated throughout.
Want to get the perfect whipped cream? Whip your ingredients while they’re cold and stop as soon as you reach the desired texture: soft, firm, or stiff peaks.
Assorted
In desserts, assorted just means a mix of different desserts. For instance, in a box of assorted donuts, you get a sugar-glazed, a Boston cream pie, a chocolate frosted, a Bavarian cream, and so on!
Sugar-Coated
Sugar-coated means that the dessert is intentionally covered with a dry, crunchy layer of sugar. Think candied nuts, sugar-dusted gummies, and of course, sugar-coated donuts.
Frosted
A list of dessert words wouldn’t be complete without frosted. This term means that dessert is covered with a sweet, gooey topping called ‘frosting.’ You’ll see it on cakes, cupcakes, cookies, basically anything that gets coated with buttercream, cream cheese frosting, or another sugary finish.
Garnish
When you garnish a dessert, you add the final touch that makes it more pleasing to the eye! The garnish can be an edible flower, a twist of citrus zest, or a drizzle of chocolate. The word has roots in ’embellishing,’ which is precisely what a garnish does: it elevates the look and sometimes the flavor.
Decadent
Have you ever eaten a dessert that is so rich and excessive, so much so that it feels sinful to eat? Well, you could say that you ate a decadent dessert. A decadent dessert could be a molten chocolate cake, a s’mores French toast tower, a 24-layer chocolate cake, or an over-the-top milkshake.
Moist
A moist dessert means that it has the right amount of moisture without being soggy. If you want to bake a moist cake, consider swapping milk for buttermilk.
Fluffy
When a dessert is fluffy, it has that airy texture that almost melts as soon as you bite into it. Think whipped frostings, sponge cakes, or soufflés that feel light rather than dense.
Glaze
A glaze is a smooth, glossy coating that adds sweetness and shine to the dessert. Some recipes even have a glaze to seal in the freshness and moisture.
Folding
Folding describes the delicate process of blending two ingredients with different densities. Why? Well, to retain the air from the aerated ingredient (like whipped cream).
Sifting
Sifting is when you put dry ingredients through a fine-mesh sieve (also called a sifter). But why should you bother sifting? Well, to prevent clumps! Clumps can ruin the texture and even taste of desserts.
Tart
Not all desserts are sweet! Some have a sharp, zesty taste, too. In this case, you’d describe the dessert as having a tart flavor. Tart could also refer to a shallow, open-faced pastry filled with fruit or custard.
